Don't get me wrong. She's a good cook, but she was getting a little lazy and started baking the chicken, forgetting to set the timer, etc.

I like to saute chicken breast in light olive oil until so it is crispy brown on the outside and moist inside. Its an art, really. And then I add a finishing sauce.

She's been digging my cooking, but check this out, brothers. I ordered all these finishing sauces from Fischer and Wieser. Can't wait for them to come in:

I'll admit that pan sauces can be a bit tricky.

But most of the sauces you listed are more like glazes than pan sauces. They would not be particularly tricky to replicate.

Smokey Ancho Cherry Sauce

Ingredients: Cherries, Lemon Juice, Pure Cane Sugar, Beet Sugar, Pectin Blend (sucrose, pectin, citric acid), Jalapeño Peppers (with vinegar and salt), Dried Cherries (with sunflower oil), Modified Tapioca Starch, Ancho Powder, Natural Smoke Flavor.

LOL at them using three different kinds of sugar to hide the fact that this crap is loaded with sweeteners. They could have just started with HFCS

I take a chicken breast, salt and pepper it, and cut it into large rectangular cubes.

Saute in extra light olive oil on medium heat. When it is juicy golden brown, throw the chicken into a bowl and mix it in some finishing sauce.

If you cook the chicken in the sauce, the sauce will burn so you add it after the chicken is done, but while it is still hot.

I do the same thing with BBQ sauce. Tastes better this way.
